It is fully vegetarian, uses takra (buttermilk) instead of raita, keeps curd and honey within Ayurveda's rules, and puts dinner early.
The Ayurvedic diet for cholesterol starts with Charaka's grocery list
In Charaka Samhita, Sutra Sthana 21, the diet for excess meda is listed food by food. This Indian diet plan for cholesterol uses every one of them. Here they are with the names you'll find at your kirana store:
Charaka's name | What it is | Verse |
|---|---|---|
Yava, yavaka | Jau (barley) | 21/25 |
Jurnahva | Jowar (sorghum) | 21/25 |
Prashatika, priyangu | Kangni and similar small millets (foxtail types) | 21/25 |
Shyamaka | Sanwa (barnyard millet) | 21/25 |
Kodrava | Kodo millet | 21/25 |
Mudga | Moong | 21/25 |
Kulattha | Kulthi (horse gram) | 21/25 |
Adhaki | Arhar / toor dal | 21/25 |
Patola | Parwal (pointed gourd) | 21/26 |
Amalaka | Amla | 21/26 |
How the food should be: for excess fat, Charaka prescribes food that is heavy but not nourishing (guru and apatarpana): filling, but not fattening (Charaka Sutra 21/20), and food and drinks that alleviate vata and reduce kapha and meda (21/21).
What the science adds:
- Jau: the US FDA allows a heart-health claim for 3 g a day of beta-glucan from whole oats or barley.
- Dal: about one serving of pulses a day (around 130 g) lowered LDL in a meta-analysis of trials (Ha et al., 2014).
- Garlic in the tadka: lowered total cholesterol by about 17 mg/dL and LDL by about 9 mg/dL over more than 2 months (Ried et al., 2013).
- Millets: we didn't find a strong human trial on millets and cholesterol, so they are in this plan on Charaka's authority, not a study's.
7 rules for every day of this veg diet chart for high cholesterol
- Cook in mustard oil; ghee only by the teaspoon, on top. Ghee is about 62% saturated fat, and Charaka cautions against heavy fats for excess kapha and meda (ghee for cholesterol).
- Takra at lunch, not raita. Ashtanga Hridaya calls buttermilk light, astringent, sour and digestive, and says it reduces kapha and vata (AH Sutra 5/33-34). One more classical rule: don't take takra with banana; the Bhojanakutuhala lists the pair as incompatible.
- No curd at dinner, ever. Charaka says curd should not be eaten at night, should not be heated, and should be eaten mixed with ghee, sugar, moong soup, honey or amla (Charaka Sutra 7). This plan skips curd and uses takra.
- Amla with meals. Sushruta recommends amla at the start, middle and end of a meal.
- 1 tablespoon of ground alsi a day, in roti atta, chilla batter or as javas chutney (flaxseed for cholesterol).
- Dinner early and light. Ayurveda advises dinner before sunset; a trial found the same dinner at 10 PM led to higher blood sugar and less fat burning than at 6 PM (Gu et al., 2020).
- Walk after meals; sit upright, don't lie down. A short walk helps after-meal blood sugar, and Charaka advises people with excess fat never to sleep in the day (Charaka Sutra 21/45). See walking after meals.
Optional, with the full rule: Charaka lists honey water after meals for excess fat (Charaka Sutra 21/26). If you take it, stir the honey into cool or room-temperature water, never warm water; honey must never be heated, is not for someone afflicted with heat, and must never be taken with ghee in equal quantity (Charaka Sutra 26). Skip it if you have diabetes unless your doctor agrees, since honey is a sugar.
